All of them. Lucas had so much fun with the first one, that he went on to do more, and make it all consistant. Besides, the added revenue will be helpful in his funding of the new flicks. Rumor has him spending a little more than Waterworld for 3 (that's three) movies.

Jabba The Hutt and other stuff

Sy Snootles is back, and will be appearing for two more minutes as CGI with a whole mess of dancing aliens around Jabba's palace.

Yoda

Yoda will be filmed in both his original puppet form and as a CGI creation. RUMOR

Ewok Celebration

Well, despite all your fears, the ewoks remain, but the celebratory sequence at the end will show shots of Bespin and Coruscant (the imperial homeworld) in celebration as well. That silly song will change too.

Software

In the ILM tradition, We can guess that SoftImage is most likely being used for animation, Alias for modeling, and a ton of programmers and artists to fill in all the gaps ;)
